Diner-Style Tuna Melt Sandwich

Description

Classic American comfort food staple, reimagined for the home kitchen. This version focuses on achieving the perfect contrast between a creamy, flavorful tuna salad and a crisp, buttery exterior. Unlike basic tuna sandwiches, Shana’s diner-style version is "grilled" to ensure the cheese is fully melted and the bread is golden and crunchy, mimicking the traditional flat-top grill method used in classic diners.

  1. Preheat oven to 400 °F/ 202°C.
  2. Add the thoroughly drained canned tuna to a bowl.
  3. Next, add the finely diced celery, onion, and bell pepper.
  4. Put the Giardiniera and the Cornichons in a small processor and finely chop the lot.
  5. Add this to the bowl along with sweet pickle relish, fresh herbs, and mayonnaise.
  6. Mix everything well.
  7. Spread the butter on one side of the 8 bread slices.
  8. Place the buttered side down onto a baking sheet, lined with grease-proof paper.
  9. Divide the filling over the first 4 slices of bread (side without butter).
  10. Top with one slice of cheese each.
  11. Top the remaining 4 'top' slices of bread with additional cheese slices.
  12. Bake for 5-7 minutes, on a lower rack of the oven, just until the cheese is bubbly and melted.
  13. Remove from the oven, and place tomato slices, if you like, on the bottom cheesy tuna toast.
  14. Press together, the bottom and top assembled toasts to make 4 tuna melt sandwiches.
  15. Cut through the middle and serve hot!  Enjoy that hot Diner-style Tuna Melt!

Note

  • Don't be tempted to add more herbs. The amount specified is the loosely packed measure. Herbs like dill offer an irreplaceable scent, but add too much, and it's all you will taste.
  • Giardiniera is pickled Italian vegetables. A homemade recipe will be posted here soon
  • If you do not have an oven, these can be made one at a time in an air fryer. You can also use a panini press/ sandwich press to make them. Otherwise, just grill the bread on a grill pan till the bread is golden and the cheese melts.
